What the games have done well is big dramatic set-pieces, i.e. the Warthog runs in Halo 1 and 3, the bridge crossing in Halo 2, the Scarab fights in Halo 3 (which I guess were kind of boss fights, so maybe they did those one right), the Ghost run in Halo 4, etc.
